Really Great Vegan Caesar Dressing

Ingredients

1 cup olive oil

1/4 cup water

1/4 cup miso

1/4 cup lemon juice

2 garlic cloves, chopped

1 tablespoon capers

1/4 tsp. sea salt

1/4 tsp black pepper

1/4 tsp white peper

Instructions

Pulse all ingredients in a blender.

Vegan Parmesan

You can get excellent shredded "parmesan style" cheese at Mother's Market. There are recipes for making your own, but they probably don't taste better than this.

Garlic Croutons

Ingredients

  • 1 loaf crusty French, Italian, or Sourdough bread

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper


Instructions

  • Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper and set aside.

  • Cut the loaf of bread into 3/4-inch cubes and place in a large bowl.

  • Mix the garlic and olive oil together and drizzle on the bread

  • . Sprinkle with Italian seasoning (if desired), salt, and black pepper. Toss until all of the bread cubes are well coated.

  • Spread the bread cubes onto the prepared baking sheet, making sure the bread cubes are in an even layer and not touching.

  • Bake for 12 to 20 minutes, tossing halfway through, or until the croutons are golden brown. Check early to make sure you don't burn them. Time will depend on the thickness of your bread and your oven. Remove from the oven and let cool completely. Store in an airtight container for up to 1 week.
